I get asked a lot about my cheese cake recipes, so I figured I would share it here! I like baking, but if I'm being honest, I only bake to decorate them. And, if I can make it, anyone can make it :)
(A) For the cheesecake:
- Cream Cheese 180g
- Sour Cream 100g
- Fresh Cream 200ml
- Eggs 3
- Sugar 100g
- Lemon Juice 1 teaspoon
- All Purpose Flour 2 tablespoons
- Vanilla Extract 1 teaspoon
(B) For the Crust:
- Biscuits/Crackers 80g
- Butter 40g (+5g to grease the Pan)
(C) For the Sauce:
- Strawberries or Cherries8-10
- Water 30ml
- Lemon Juice 2 tablespoon
1. Prepare the crust
Warm 40g of butter in the microwave, and then keep it aside. Then, take 5g of butter, and rub onto pan. Crush the biscuits in a bag with rolling pin until they form fine crumbs (Don't worry if they're not perfectly fine). Then, mix both the butter and biscuit crumbs in a bowl and put into the pan after properly mixed. Press the mixture with table spoon to the pan to form crumb-butter mixture into a crust, and then place pan in fridge.
2. The batter
Once everything in the list (A) is room temperature, add everything into a bowl in the following order. First comes the Cream cheese, then sour cream, fresh cream, eggs, sugar, lemon juice, all purpose flour, and finally vanilla extract. Then mix thoroughly with cake mixer.
3. Pour the batter
Take out the crust from the fridge and pour the batter you just made on top of the crust.
Preheat the oven to 180℃ or 350℉. Fill a medium size aluminum tray half-way with water, and place on bottom rack of oven. Then place cheesecake pan on top rack and bake the cake for 50-60 minutes. After baking, let it cool in the oven for 10 minutes, while keeping the door closed. Then place it in the fridge after it has cooled.
5.Prepare the sauce
Heat a clean pot on the stove under low heat and add some strawberries/cherries. Let it cook until it forms into a paste. Add water, lemon juice and stir after turning off the stove. Once cooled, blend the sauce in a blender. Then, place the sauce in the fridge.
This is my favorite part! You can either keep it simple and serve it without any decoration, or decorate with some fruit to make it look gorgeous!
Pour the sauce on cooled cheese cake, and then place it in the freezer.
(I used Cherries for the Cake's Sauce, and I blended it in a blender)
While the sauce sets on the cake, cut the fruits you want to decorate the cheese cake with and let your imagination do the rest! Put it in fridge until serving.
And Voila! Yummy cheese cake is ready to eat! :)
(I melted some chocolate and poured it in between the strawberries to hold them. I also brushed the strawberries with some honey to make them shine! )
